Villeneuve-Loubet Heading east from Antibes in the direction of Nice, one reaches Villeneuve Loubet. The coastal area known as Villeneuve Loubet Plage is very commercial and the main road is lined with supermarkets and fast food restaurants. Some great bargains are to be found here, particularly in the discount wine and clothing stores. The entire town is dominated by the Marina Baie des Anges and the enormous curved apartment blocks that surround it. This development is not solely residential and also contains some excellent restaurants, most of them directly on the waterfront. The town has a four mile stretch of beach which is shingle like that of neighbouring town Cagnes sur Mer. In fact, there are no natural sandy beaches east of Antibes. The old Village of Villeneuve Loubet lies 1 mile inland from the coast. It is easily recognisable by the twelve century tower that dominates the village. The village is a very pretty place to visit and the views of the bay across to Nice are superb. The village has two excellent museums. The Fondation Auguste Escoffier is dedicated to the famous French chef who is said to have invented the stock cube as well as peach melba. He was born in Villeneuve Loubet and the museum was formerly his house. The chef spent much of his time outside of France, working in luxury hotels around the World. Anyone interested in cooking will be fascinated by the old kitchen and all the utensils, some of which the chef himself invented. A large collection of recipes is also on show. The town’s other museum is the Musée Militaire which houses a large collection of photographs and military artifacts from the two world wars as well as French conflicts in Vietnam and Algeria. Built in the Middle Ages, the castle in Villeneuve Loubet is made up with a superb pentagonal-shaped donjon from the XIII?th century. Its two surrounding walls with circular towers date from the XVIth Century. At this time, the castle welcomed the King of the France, François the 1st, who ruled his kingdom from Villeneuve for 3 weeks. Owned by the Panisses-Passis family since 1742, the castle is situated in a magnificent park planted with Mediterranean and exotic species. It is a real opportunity to have access to this private residence, to go across the gardens and to walk the covered way before entering into the magical atmosphere of the courtyard. Villeneuve-Loubet Villeneuve-Loubet is a town and commune in southeastern France, in the Alpes-Maritimes département, between Cagnes-sur-Mer and Antibes, at the mouth of the Loup River. It was created by the joining two old villages: the old village of Villeneuve inland and the village of Loubet on the shore of the Mediterranean Sea. Its inhabitants are called Villeneuvois. It's population is 13,104 and it's area is 20 km2. Villeneuve-Loubet is 20 km from Cannes and Grasse and 10 km from Nice. The entire town is dominated by the Marina Baie des Anges and the enormous curved apartment blocks that surround it. This development is not solely residential and also contains some excellent restaurants, most of them directly on the waterfront. Sophia Antipolis Sophia Antipolis is a technology park northwest of Antibes and southwest of Nice, France. Much of the park falls within the commune of Valbonne. Created in 1970~84, it houses primarily companies in the fields of computing, electronics, pharmacology and biotechnology. Several institutions of higher learning are also located here, along with the European headquarters of W3C. Sophia Antipolis is named after Sophie Glikman-Toumarkine, the wife of French Senator Pierre Laffitte, founder of the park, and incidentally, Sophia, the goddess of wisdom, and Antipolis, the ancient Greek name of Antibes. Georges Auguste Escoffier (28 October 1846 – 12 February 1935) was a French chef, restaurateur and culinary writer who popularized and updated traditional French cooking methods. He is a near-legendary figure among chefs and gourmets, and was one of the most important leaders in the development of modern French cuisine. Much of Escoffier's technique was based on that of Antoine Carême, one of the codifiers of French Haute cuisine, but Escoffier's achievement was to simplify and modernize Carême's elaborate and ornate style.
Alongside the recipes he recorded and invented, another of Escoffier's contributions to cooking was to elevate it to the status of a respected profession, and to introduce discipline and sobriety where before there had been disorder and drunkenness. [citation needed] He organized his kitchens by the brigade system, with each section run by a chef de partie. He also replaced the practice of service à la française (serving all dishes at once) with service à la russe (serving each dish in the order printed on the menu). He was born in the village of Villeneuve-Loubet, near Nice. At the age of thirteen, despite showing early promise as an artist, he started an apprenticeship at his uncle's restaurant, Le Restaurant Français, in Nice. In 1865 he moved to Le Petit Moulin Rouge restaurant in Paris. He stayed there until the outbreak of the Franco-Prussian war in 1870, when he became an army chef. His army experience led him to study the technique of canning food. Some time before 1878 he opened his own restaurant, Le Faisan d'Or (The Golden Pheasant) in Cannes. In 1880 he married Delphine Daffis. In 1884 the couple moved to Monte Carlo, where Escoffier took control of the kitchen at the Grand Hotel. During the summers he ran the kitchen of the Hotel National in Lucerne, where he met César Ritz (at that time the French Riviera was a winter resort). The two men formed a partnership and in 1890 moved to the Savoy Hotel in London. From this base they established a number of famous hotels, including the Grand Hotel in Rome, and numerous Ritz Hotels around the world. In 1898 Escoffier and Ritz opened the Hôtel Ritz in Paris. The Carlton in London followed in 1899, where Escoffier first introduced the practice of the à la carte menu. Ritz had a nervous breakdown in 1901, leaving Escoffier to run the Carlton until 1919, shortly after Ritz's death. One of his pupils in the later part of this period was Ho Chi Minh, whom he trained as a pastry chef. More info on Escoffier |
